Decisions, decisions

Most of this weekend will be dedicated to grilling dinner entrees or entire meals that I've already written about. So now it's a choice of what to do for breakfast and even dessert.

I found a recipe online for homemade English Muffins. They involve a lot of frying instead of baking which reduces the cooking time and with my two 6 inch cast iron skillets, I can fry up a bunch pretty quickly on the Saffire while bacon and sausage cook on the primary grid. I can even fry up the eggs in the skillets as the muffins cool.

A dessert option would be cookies. I tried 6 on the grill a few days ago as a test and they turned out great! I'm not sure if I'd do chocolate chip again or M&M but a friend of mine baked M&M cookies on his Saffire not too long ago. What do you think?

Make sure you have enough charcoal. Fill your firebox all the way to where the firebox meets the fire ring.

Make sure you leave the dome up and the bottom vent open until the fire is going good.

A remote meat thermometer is your friend. I use a Maverick myself and it tracks the heat of whatever I'm cooking and my grill temperature, with an alarm to let me know if the fire gets too hot and when the meat is finished.
