So this is my Ceramic Cooker (aka Kamado Grill)

So this is it! It's a Large Ceramic Cooker manufactured by Saffire Grill Co. I have an elevated rack to cook with more indirect heat and enough room to smoke huge chunks of beef or pork, multiple racks of ribs, or sear tons of smaller cuts of meat when I use my handy dandy heat deflector.

My favorite thing about the Saffire is the port in the front. It's called the Smokin' Chip feeder. I use a tool, a round stainless steel tube that's bisected most of the way down, by loading wood chips on it and putting it into the hole and dumping the wood chips onto my fire to smoke the meat. It's handy because I don't have to lift my dome and dry out my meat or take the meat and grid off to load chips. I'm pretty sure it also means that I use fewer wood chips this way.

I was in love with my old Weber kettle grill until this came along. It's been 10 months and I haven't looked back.

SMOKING TIPS

Make sure you have enough charcoal. Fill your firebox all the way to where the firebox meets the fire ring.

Make sure you leave the dome up and the bottom vent open until the fire is going good.

A remote meat thermometer is your friend. I use a Maverick myself and it tracks the heat of whatever I'm cooking and my grill temperature, with an alarm to let me know if the fire gets too hot and when the meat is finished.
